Masterchef Michael Fletcher
Michael Fletcher is head chef at the international award-winning Gold Coast Convention and Exhibition Centre (GCCEC) in Queensland. He manages a team of chefs who deliver innovative, quality cuisine daily to guests from around the world.
Michael spearheaded ‘Kitchens of the 21st Century’ - a new approach to convention and catering cuisine which is being lauded by international culinary experts. It encourages individual creativity to deliver a memorable dining experience.
Born in Newcastle, Michael did his apprenticeship at The Gabba cricket ground in Brisbane and has worked in some of the world’s most exotic places including Vietnam, the Caribbean and Papua New Guinea.
He is Madura’s tea ambassador, and has a penchant for reinventing traditional dishes using the subtle flavours and aromas of Madura tea.
His motto in life: “Listen and enjoy - it’s a life that can take you places you cannot buy”
