If you are a chai lover, and you love cooking, you will already know how delicious and easy Chai is to incorporate into recipes. For something super easy and delicious try infusing pears with Chai and enjoy them on their own or with a dollop of creamy Greek yoghurt – yum! Not only are pears sweet and juicy, but they are also an unsung hero in the fruit world. Move over apple – a pear day might keep the doctor away too!


Did you know Pears are…

Great for digestion: Consumption of dietary fibre is key for digestive health and preventing constipation. What’s more, a raw pear is 84% water, so if you struggle to stay hydrated throughout the day, this tasty snack can be a way of increasing your intake.
Can help with weight management: While the calorie content of some fruits – such as dates and avocados – can put some people off, there is no such issue with pears.
A great source of antioxidants: Like the humble tea leaf, pears are a great source of antioxidants and polyphenols, including flavanols. Pears are also a source of the antioxidant nutrient vitamin C!
They can help balance blood sugar: Pears provide a proportion of their sugar as fructose. Interestingly, fructose-rich foods do not raise blood sugar levels as rapidly as glucose – This means that pears are the perfect sweet snack for balancing blood sugar.

Back to the Cake Recipe, We Hear You Say!

So here it is … for the exception of poaching the pears it literally takes a few minutes to make the cake batter, and by the time you know it this deviously decadent cake will be in your oven! After that, it’s just waiting impatiently for it cool down! 

Ready. Set. Bake.

Poached Chai Pear and Chocolate Cake

For the poached pears
4 pears, peeled with stems left on
 1 bottle (750ml) dry white wine
 1 cup granulated sugar
 1 cup water
 4 Madura Te Chai infusers 

For the chocolate cake

1 2/3 cups all-purpose flour
 3/4 cup brown sugar
 1/3 cup unsweetened cocoa powder
 1 tsp baking powder
 1 tsp ground cinnamon
 1/2 tsp baking soda
 pinch of salt
 1 egg
 1 cup buttermilk
 1/2 cup olive oil


1 tsp all-purpose flour
 1 tsp unsweetened cocoa powder
 1/4 tsp ground cinnamon

Preheat oven to 180°C. Grease a standard-size loaf pan and set it aside.
Heat the peeled pears, white wine, sugar, water, and chai tea until boiling, then turn the heat down to simmer. Continue to cook for 45 minutes. Gently remove pears from poaching liquid and cool them slightly.

In a large bowl combine flour, brown sugar, cocoa powder, baking powder, 1 tsp cinnamon, baking soda, and salt. In a medium bowl whisk together egg, buttermilk, and olive oil. Add to flour mixture and whisk everything together until smooth. Pour batter into prepared loaf pan.

In a small, shallow dish combine 1 tbsp flour, 1 tbsp cocoa powder and 1/4 tsp cinnamon. Gently roll each pear in the flour mixture to lightly coat. Place pears, stem sides up, down into the batter evenly placed apart (pears will be exposed at the top, and that is ok as the mixture will rise around them during baking).

Bake for 50 to 55 minutes or until a toothpick inserted near the centre comes out clean. Remove the cake and cool in pan on a wire rack for 10 min. Lastly, remove the cake from the pan and let it cool completely. Serve with lashings of dollop cream and cinnamon sugar if you feel in the mood.
