Creamy Chai Fused Porridge

A delicious Creamy Chai Fused Porridge for the perfect winter warmer.

WHAT YOU NEED

40g oats (1/3 cup + 2 tbs) 1 tsp chia seeds 3/4 cup water 1/2 cup milk of choice 3 tsp loose leaf Madura Chai tea in a brewing tool (or 3 pyramid tea bags) 1 tsp pure raw honey 1 tbs flaked almonds 1 tsp walnuts, roughly chopped 1 tsp coconut sugar Dollop of coconut yoghurt  

TO MAKE

Preheat the grill & toast the flaked almonds until golden - watch them carefully though! Remove almonds from grill and set aside. In a small saucepan bring the milk and water to a simmer over medium heat. Remove from heat - add the chai tea and allow to infuse for 8 minutes. Return the saucepan to the heat and bring to simmer again. Remove the tea bags/brewing tool and transfer the mixture to a jug. Add the oats, chia seeds and 3/4 of the milky tea mixture to the saucepan – allow to sit over a medium heat, once it begins to bubble, stir continuously and continue to until the oats and seeds have absorbed the liquid. Add the remaining milk mixture and extra water/milk if required. Remove from heat when a desired consistency is reached. Spoon porridge into your favourite breakfast bowl, top with the crushed walnuts, almonds, honey and fresh blueberries. Finish off with a dollop of coconut yoghurt – delish!
