Pancakes with a T’wist

Lazy Weekend Pancakes….

There is nothing like lazy weekend mornings spent in PJ’s, reading a good book, listening to a favourite CD (yes I said CD) and a Madura hot brew on repeat…. Throw in morning pancakes infused with Organic Black Tea with Lemon and Lime and we may have just walked into the house of happiness.
We used organic produce for this recipe wherever possible – but if you can’t don’t stress, keeping it as delicious and healthy is simply the main aim. No need to add sugar – you will be adding lashings of maple syrup.
Warning – expect sticky fingers!


1 x 1.5 cups all-purpose flour
3 x tsp baking powder
½ x tsp salt
1 x egg
3 x tbsp melted butter + extra
1 x 1 1/4 cup milk
2 x Madura Organic Black Tea with Lemon and lime


Gently warm the milk and place the two teabags in the warmed milk – allow to infuse overnight in the fridge or at the very least a couple of hours. Strain and set aside. Mix all of the dry ingredients in a mixing bowl, then gradually add the milk brew, egg, and melted butter. Pour small amounts into a buttered frying pan over medium heat until they’re browned. Top with fresh fruit, and maple syrup – and of course serve with your favourite Madura brew!
